WT (wait temperature)
Sets TEMPERATURE as the main parameter to be observed in order to consider finished a recipe.This Feature is programmable either from the machine or from your PC(with our "CreatorPRO" software), and has two main uses:
- since you know what temperature has to be reached by your recipe to be finished, using the WT feature you'll be able to get the same result always, regardless of the quantity and initial temperature of your selected ingredients;
EXAMPLE:
According to our recipe #12 ("Pastry Cream" - Category: Desserts), the pastry cream is ready when the preparation reaches the temperature of 87°C.
So, setting "WT: 87°C", the result will always be exactly the same.
If it's true -as it is- that standardization of the results is an important goal for a professional chef, this is one of the features that our users will appreciate most
- if, instead, you need to heat something up to a specified temperature, and then keep that temperature for a specified time, after setting the temperature you can set a time to keep such temperature; thus you'll be able to obtain always the same results, regardless of the quantiy and initial temperature of your selected ingredients.
EXAMPLE:
According to our "Clarified butter" recipe (Program #45) , the preparation is ready after 5 minutes at 85 °C
NEXT
Allows two subsequent different operations on the same bowl content, without the chef's presence.
This feature is programmable only through our PC software "CreatorPRO", and it has two main uses:
- In the end of a recipe, you may need to set a final operation on your final result, as for example to give your cream a nice shine effect, without being phisically present.
Thanks to our PC software "CreatorPRO", you can connect two subsequent STEPS, i.e. modifying SPEED value.
EXAMPLE:
According to our recipe #12 ("Pastry Cream" - Category: Desserts), the pastry cream is ready when the preparation reaches the temperature of 87°C.
By using the NEXT function, you can prepare your pastry cream and then mix it at high speed for some seconds, in order to give it a shine effect. Normally you would come back to the machine and set manually this operation, but the NEXT function is just for that: letting the user do something else while the preparation gets finished.
But that is not all: with the use of more NEXTs you can give your machines complex instructions.
In the above example we talked about pastry cream.
Let's assume that you have prepared 2 lt of cream, but do not want to use it all at a time.
With a second NEXT, you can set the machine to:
- prepare the cream up to 87 °C (WT);
- NEXT mix it fast to give it a shine;
- NEXT and finally, keep it mixed for as long as you desire, at the speed and temperature you have previously chosen.
And all this, without requiring your presence in front of the HotmixPRO. You can leave it and be sure that it will apply all your set operation to the recipe, while you are able to do something more important.
PULSE2
Sets small pauses during operations.This feature is programmable only through our PC software "CreatorPRO".
It can be useful during ingredient-preparation phases, such as mincing or grating. With this feature, the machine will alternate 10 seconds of work (at your selected speed) to 2 seconds of pause (blades simply stop turning), then again 10 seconds of work and 2 of pause, and so on, for the set time.
That way, during the brief pauses, whatever was pushed against the bowl walls falls down again towards the blades. This of course optimizes the final result, since there will be no untreated parts.
